Customer Spotlight: Whitley’s Peanut Factory and Gluten-Free Snack Mix

At Phillips Energy, we treasure the relationships we’ve built with the customers in our community. We’ve grown over the last 75 years and so has our commitment to Gloucester, Mathews, New Kent and the rest of the communities in Upper Tidewater we serve.

We asked a few local businesses to share their favorite recipes. This one comes from Whitley’s Peanut Factory, celebrating its own anniversary this year. For the last 35 years, Whitley’s has produced hand-roasted, slowly cooked peanuts that are known as Virginia’s finest. Standard shipping is always free; try a sampler if you can’t decide!

This recipe shared by a former employee is gluten-free as are most Whitley’s products.

Gluten-Free Snack Mix

Ingredients
4 cups Corn Chex
4 cups Rice Chex
½  cup Whitley's Salted Virginia Peanuts
½  cup Whitley's Salted Jumbo Cashews
¼  cup Whitley's Salted Pecans
1 cup gluten free pretzels
½  cup salted butter
2 tbsp gluten-free Worcestershire sauce
2 tsp seasoned salt
¾ tsp garlic powder
½  tsp onion powder
½  tsp celery salt

Instructions

Preheat oven to 250 degrees.

Add the Corn Chex, Rice Chex, nuts and pretzels to a large bowl. Mix to combine then set aside.

Melt the butter in a small saucepan over low heat or in the microwave in a microwave-safe bowl. Add the Worcestershire sauce, seasoned salt, garlic powder, onion powder and celery salt to the melted butter. Whisk to combine.

Pour the butter mixture over the Chex mix. Gently stir well until all of the Chex mix is coated with the butter mixture.

Split the mixture between two rimmed half-sheet pans and spread evenly.

Bake for 1 hour, stirring every 15 minutes.

When done, cool completely.

Store leftovers in an air-tight container.
